For this deliciousness you will need:
-A lage handfull (or two) of kale (chopped finely)
-one half of a medium sized white onion (I suppose you could use any kind and ammount to taste)
-two or three cloves of garlic (again, or to taste)
-olive oil
-balsamic vinegar (you could use one of the flavoured kinds if you want, but I reccomend the plain)
-pine nuts** (optional)
-mushrooms (canned or fresh depending on your preference and wallet)** Oh, also optional.
First, take the onion, garlic and mushrooms (if you are working with them that is) and simply sautee them in a pan with some olive oil until you have the onions nice and translucent....
Next take the chopped kale and put it in the pan, keeping it moving constantly... seriously, we don't want it to get soggy, just lightly wilted so that it will retain it's crunchyness... This step should only take 30 seconds or so....
Now we are ready to remove it to a burner that is not on... Once on the non hot burner, you are ready to add the balsamic vinegar... Add about a tablespoon or so to start with. (remember you can always add more but you can't always take away)... You don't want to see any excess hangin' out in the bottom of the pan after you have stirred it in.
Once the vinegar has been added in, you are ready to add the pine nuts in... The ammount you add in is completely up to you.. I myself really enjoy the crunch so I like to use a few tablespoons. Again this is completely optional.. It is a wonderful dish without them as well, so please don't feel obligated at all to put them in...
