Moroccan Grated Carrot Salad

6 carrots, peeled and grated
2 oranges
2 tsp orange juice, peeled and segmented with skins removed
2 tsp confectioners sugar
Salt, to taste
cinnamon, to taste


Mix grated carrots and peeled and segmented oranges into a salad bowl. In a small mixing bowl, combine the remaining ingredients. Pour the juice mixture over the salad bowl contents and mix. Cover and refrigerate for at least one hour.
