2 small zucchinis
olive oil
sea salt
lemon juice
bread crumbs
parmesan cheese
cut up about 1 1/4 of the zucchini into bite sized bits, then roughly grate the rest of it. Over medium heat, sautee the bite sized bits in olive oil and season with salt. When this is almost cooked to your desired tenderness, toss in the grated zucchini. Add about 1/2 tsp of lemon juice, 1 1/2 tbs bread crumbs and 1 tbs parmesan cheese. Stir until mixed thoroughly. Remove from heat when you've reached your esired tenderness and serve.
Sometimes I mix in some crushed tomatoe too.
