1/2 c chopped red onion
2 tsp olive oil
1 tsp minced garlic
3/4 tsp oregano
3/4 tsp cumin
1 can 15oz black beans, drained and rinsed
2 c chicken broth
1 tbsp feta
1. In a large saucepan, combine onion, oil, garlic, oregano, cumin, and salt to taste. Cook, stirring over medium heat until softened, about 3
2. Cook, stirring occasionally, for 10mins. Mash some of the beans against the side of the pan. Serve sprinkled with feta and cilantro
