Vegetarian Baked Ziti

1 pound pasta
half a package of mushrooms
1 med onion
1 cup frozen peas
1 cup fresh spinach julian style
2 carrots thinly cut
half of a red pepper thinly cut
half of a green pepper thinly cut
1 cup ricotta
3 cups of your favorite red sauce [I used Nicks leftover homemade sauce]
2 cups mozzarella

Pre-Heat oven to 350

chop up all your veggies, cook the onion in a pan till translucent and set aside.
cook the pasta al dente, drain and place back in pan. Add all the veggies and sauce stir well. Add about a cup and half of the mozzarella and stir well. Place half of the ziti mixture into a baking dish top with half the ricotta cheese, put the rest of the ziti on top, layer remaining ricotta and top with remaining mozzarella. Place in oven covered with foil for 40 mins, uncovered for 15. Take out of oven and cover back up for about 5 mins.
